Aloha Rice Salad

Source: The McDougall Quick & Easy Cookbook

 

1 8 oz. can pineapple chunks in juice

3 c. cold cooked brown rice

1 red bell pepper, chopped

1 c. chopped cucumber

1 c. shredded carrots

1/2 c. chopped green onions

 

Dressing:

2 T. lime juice

2 T. sherry

2 T. chopped fresh cilantro

1 T. rice vinegar

1 tsp. minced fresh gingerroot

 

Drain the pineapple, reserving 3 tablespoons of the juice in a separate bowl.

 

MIx the pineapple chunks, rice, and vegetables. Combine the dressing over the

salad and toss to mix. Refrigerate for at least 2 hours to blend the flavors.
