Guest guest Posted December 13, 2004 Report Share Posted December 13, 2004 Pumpkin Pie Source: The McDougall Quick & Easy Cookbook This is our favorite pumpkin pie recipe! 15 oz. lite silken tofu 1 16 oz. can solid pack pumpkin 2/3 c. honey 1 tsp. vanilla 1 tsp. ground cinnamon 1 tsp. pumpkin pie spice 1/2 tsp. ground ginger 1/4 tsp. ground cloves 1 pie crust (gf of course) Preheat the oven to 350 degrees. Combine all ingredients in a food processor (or blender) and process until very smooth. Pour into a pie crust and bake for 1 hour. Remove from the oven and chill for at least 2 hours before serving.
