Guest guest Posted November 2, 2005 Report Share Posted November 2, 2005 Squash Soup with Cashews 1 tsp oil 1 medium white onion, peeled and chopped 3 or 4 cups cooked squash 1/2 tsp salt (optional) 1/2 tsp ground black pepper (optional) 1/2 tsp dried crushed red pepper (optional) 1 & 1/2 cups soymilk or vegetable broth 1/3 cup cashew butter (or ground cashews) Put oil in a large saucepan over medium-low heat. Add onion, and sauté` until golden brown. Add the cooked squash, and stir in the soymilk or broth. Bring to a boil, reduce heat, and simmer 45 minutes, covered, on low heat. Stir in the cashew butter and seasonings during the last 15 minutes of cooking. Blend soup until smooth in/with blender (in batches, if necessary). Heat until hot. Serve.
