Guest guest Posted November 2, 2005 Report Share Posted November 2, 2005 SOUTHERN JOHNNYCAKES 2 cups corn meal 1 tsp. salt 3 Tbsp. margarine (or olive oil) 2 Tbsp. brown sugar 1/2 cup soy milk (or alternative) 2 cups boiling water Mix all ingredients, except water. Blend well. Add water slowly to make a fairly soft batter but one which will hold its shape. If too thick, add a little extra water. Drop by spoonfuls onto a hot greased griddle and flatten to 1/2 inch thick. Turn when brown around the edges. Serve with applesauce or syrup.
