Guest guest Posted April 18, 2005 Report Share Posted April 18, 2005 Artichokes with Light Lemon Dipping Sauce Source: Women's Ministries Cooking Demonstration (recipe submitted as given. . .) Sauce 2/3 cup plain nonfat soy yogurt 1/3 cup fresh lemon juice 2 Tbs. frozen apple juice concentrate, thawed 1 Tbs. minced fresh garlic 2 Tbs. dijon mustard 1 tsp. curry powder Artichokes 2 artichokes 1 lemon, quartered In a medium bowl, whisk together all sauce ingredients. Let mixture stand at room temperature while artichokes cook. With kitchen shears, clip points from artichoke leaves if desired. Bring 3 quarts water to a boil, then add artichokes and lemon. Boil, uncovered, until tender, about 30 - 45 minutes (or more) depending on size of artichokes. Drain well. To serve, center each artichoke on a small plate. Spoon sauce into its cavity or into a small bowl for dipping. Serves: 2 Helpful Hint: Leftover dipping sauce will keep one week in the refrigerator in a covered container.
