" Mahatma Gandhi. ________________________________ The Dragon <dragonsteeluk ; vegetarian slimming <vegetarianslimming > Thursday, April 23, 2009 5:35:49 PM Quick mixed vegetable curry Quick Mixed Vegetable Curry (serves 4) Taken from " The Curry Book " Laxmi Khurana, Asha Naran and Shelina Jetha Ingredients 45ml cooking oil 0.5 tsp cumin seeds 0.5 tsp black mustard seeds 1 large onion, finely chopped 2 tsp tomato puree 1 tsp turmeric powder 1 tsp chilli powder 1 tsp garam masala 1 tsp salt 1 tsp garlic powder 450g frozen, mixed vegetables 2 small potatoes, chopped into very small pieces 300 ml water Method Heat the oil to a high temperature in a pan, add the cumin, black mustard and chopped onion. Cook together until the onion is golden brown. Add the tomato puree, turmeric powder, chilli powder, garam masala, salt, garlic powder, mixed vegetables and potatoes. Stir continuously and cook for a further 5 minutes. Add the water to the vegetables, and bring to the boil. Reduce the heat and simmer gently for about 20 minutes. Serve hot.
