Hi Dragon,

Thanks for the recipe! - Quick and easy. One word: There's really no need on a

low-fat cooking group to use as much oil for cooking as the recipe says. I shall

make a note on the file that less would be better :)

Best, Pat

Quick mixed vegetable curry

Quick Mixed Vegetable Curry (serves 4)

Taken from " The Curry Book " Laxmi Khurana, Asha Naran and Shelina Jetha

Ingredients

45ml cooking oil

0.5 tsp cumin seeds

0.5 tsp black mustard seeds

1 large onion, finely chopped

2 tsp tomato puree

1 tsp turmeric powder

1 tsp chilli powder

1 tsp garam masala

1 tsp salt

1 tsp garlic powder

450g frozen, mixed vegetables

2 small potatoes, chopped into very small pieces

300 ml water

Method

Heat

the oil to a high temperature in a pan, add the cumin, black mustard

and chopped onion. Cook together until the onion is golden brown.

Add

the tomato puree, turmeric powder, chilli powder, garam masala, salt,

garlic powder, mixed vegetables and potatoes. Stir continuously and

cook for a further 5 minutes.

Add the water to the vegetables, and bring to the boil. Reduce the heat and

simmer gently for about 20 minutes. Serve hot.

OK, thought that's what had probably happened :) What I'll do is change your

recipe to say something like:

1 Tbsp. oil (or as little as you can get away with)

That covers a multitude of sins, eh? LOL

Thanks for the reply. Shall go and do that now!

Love, Pat
