Jude's Hummus

Amount Measure Ingredient -- Preparation Method

2 Tablespoons sesame seeds -- dry toasted

15 ounces garbanzo beans, canned -- drain and reserve liquid

1 Tablespoon olive oil

1/2 cup onion -- finely chopped

3 cloves garlic -- mashed

1 teaspoon Mexican oregano -- crushed

1 teaspoon cumin -- freshly ground

1 teaspoon New Mexico red chile -- to taste

2 Tablespoons lemon juice -- freshly squeezed

1/2 teaspoon salt

1/3 cup garbanzo bean liquid -- as needed

 

Whiz everything in the food processer to desired consistancy.

 

Serve chilled, garnished with cilantro, if desired.
