Guest guest Posted October 4, 2005 Report Share Posted October 4, 2005 I looked through my own files but could not come up with a lentil " chopped liver " ; however, I know there are several out there on the internet; you might run a search. I improvise quite a bit in my cooking, and I don't see why you couldn't use the same basic recipe and seasoning ideas subbing cooked lentils. As for the pie - I make a vegetarian " Shepard's Pie " using assorted roasted veggies. I make extra veggies and potatoes ahead of time for this purpose. I then make a gravy made with 2-3 cups vegetable broth thickened with some sweet rice flour or arrowroot starch. I often add some molasses for color and iron. Sometimes I add a little curry. I like to add cooked chick peas or lentils or beans for added protein. I combine the roasted veggies, beans and gravy. I layer this veggie-bean mixture into an oven-safe casserole dish and top it with mashed potatoes; bake at 350 degrees until heated through and bubbling, about 30 minutes. It's different every time I make it depending upon the veggies I have on hand. Usually there are sliced carrots, peas, mushrooms, and broccoli for starters.
