Guest guest Posted July 8, 2006 Report Share Posted July 8, 2006 Coconut Walnut Cookies (recipe courtesty of Whole Foods Markets/Brenda Lee on GFCF Recipes) Makes 24 two-inch cookies - 11/2-13/4 cups coconut flour - 3/4 cups walnuts, chopped - 1/2 tsp baking soda - 1/4 tsp sea salt - 1/4 cup canola oil - 1/3 cup rice syrup - 1/2 tsp vanilla - 1/2 tsp coconut extract Preheat oven to 350°F. Mix flour, baking soda, and sea salt. Finely chop walnuts and add to other dry ingredients. In a separate bowl, beat oil and syrup. Add vanilla, small amount water, and coconut extract and beat well. Combine with flour mixture; the dough should be very stiff; add extra flour if necessary. Drop dough by rounded spoonfuls onto lightly oiled cookie sheets. Press cookies with a fork to about 1/2 inch thickness. Bake for 12-15 minutes or until bottoms are golden. Remove and cool on a wire rack.
