Hrm . . . I wonder if salsify would work?

http://www.foodsubs.com/Roots.html#salsify

Perhaps it could be caramelized or pickled?

Reducing mushroom broth with some red wine might also work. Perhaps

enoki and oyster mushrooms for flavor.

I'm just trying to think of soy-free options.

give both versions a try when I have time.

Kim, one site suggested that oyster sauce be placed in an ice cube tray and

frozen. Then you can use one cube at a time. Good idea for " ease " .

Does the seasoning mix contain MSG? This is always my problem. I am so

allergic to MSG, that i just have to avoid it at all costs.

Also, here's a little joke I was thinking, if you use Oyster Mushrooms, it would

still be oyster sauce - lol

Here's a conversion that I just created. Is someone brave enough to try it

out? I think it may need more salt, as I converted this from a low-sodium

recipe.

Mushroom " Oyster " Sauce

16 oz [Oysters] SUBSTITUTE fresh mushrooms, finely chopped

1/2 t Lemon Juice

1 1/2 c Water

1 1/2 T Chicken-style seasoning (Bragg's or McKay's)

2 T Bragg's Liquid Aminos

No, BL, the spices do not contain MSG. I believe you can purchase McKay's

" with " MSG, but I do not. MSG is a big " no no " for us too!

We'd have to give it a new " fake " name. . .like MushOy Sauce! LOL!
