Guest guest Posted January 29, 2004 Report Share Posted January 29, 2004 I went to the ABC today, and found a cute little booklet called, Nutrition Workshop guide by. Eriann & Timothy Hullquist. It cost only 1.99 or less. I made two recipes from it, and they were soo good. Even my cheese eating husband went back for seconds. I made Cheez Potatoes and Tofu Corn Puffs. The recipes are as follows, I hope everyone gets a chance to try them. Cheez Postatoes: 3 potatoes, peeled 1 Carrot, peeled 1-2 cups water ( I used the water from the potatoes and carrot) 1/2 cup nutritional yeast flakes 1/2 cup vegetable oil 2 TBSP. Chicken style seasoning 1tsp. each: Salt and onion powder 1/2 tsp. garlic powder 8-10 additional potatoes In a sauce pan, cook potatoes and carrot until soft. In a blender, blend all ingredients thoroughly. Add additional water if necessary to keep blender going. Clean and peal the " additional " potatoes and thinly slice or shred. Mix these potatoes with the blender sauce and put in a large greased casserold dish. Bake in 325 F oven for 45-60 minutes. While this was baking I made: Tofu Corn Puffs 1/2 cup water 1/2 cup cashews, raw 1 cup tofu, mashed 2 TBSP. onion flakes ( I only had onion powder) 2 TBSP. Nutritional yeast flakes 2 1/2 tsp. Chicken style seasoning 1 tsp. onion salt ( I used sea salt) 1/4 tsp. sweet basil ( I used reg. basil and eyeballed about 1/2 tsp) 2 cups whole kernel corn 2 cups bread crumbs ( GF or WW) In a blender, blend the water and cashews together thoroughly. Remove to mixing bowl and add the rest of ingredients. (My Daughter used her hands and mushed this together for about 10 minutes while I was getting other things together. So everything was well blended) Form patties and brown on a medium-low heat frying pan in a little oil for approximately 6 minuetes each side. ( I made really small patties and fried on med-high for about 5 min each side) Hope you all enjoy these as much as we did.. it was so good.
