Recipe: Blue Ribbon Flaxseed Cornbread

 

Flaxseeds are exceptionally rich in essential omega-3 fatty acids and a

great source of fiber, folic acid, manganese, and vitamin B6. Although often

overlooked, flaxseeds are very versatile and can be used in dishes whole,

ground, or in the form of oil. Treat yourself to this award-winning,

egg-free cornbread. This moist, home-baked bread actually won the blue

ribbon at the Iowa State Fair… and those folks know their corn!

 

Ingredients:

 

2 Tbs. ground flaxseed

6 Tbs. water

1 cup all purpose flour

1 cup cornmeal

1/4 cup sugar

4 tsp. baking powder

3/4 tsp. salt

1 cup soymilk

1/4 cup vegetable oil

 

Directions:

 

Adjust oven rack to middle position preheat oven to 425F; spray an

8-inch-square baking dish with nonstick cooking spray.

Bring water to a boil in a small saucepan; add ground flaxseed, reduce heat

to medium-low, and simmer for 3 minutes or until thickened, stirring

occasionally; set aside.

In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder,

and salt until well-combined.

Add the ground flaxseed mixture, soymilk, and vegetable oil to the flour

mixture; beat just until smooth (do not overbeat).

Pour into the baking pan and bake for 20-25 minutes, or until a toothpick

inserted in the middle comes out clean.

Cool on wire rack for 20 minutes or longer; cut into pieces and serve.

Health: Flaxseed Fights Cancer

 

Prostate cancer patients may be better off taking flaxseed supplements,

according to researchers at Duke University Medical Center. The study found

that flaxseed, when used with a low-fat diet, is effective in halting cancer

growth.

 

The researchers assigned four types of diets to four groups of cancer

patients. The biopsy to determine how quickly the cancer cell had multiplied

showed that patients both in the flaxseed supplement group and the flaxseed

plus low-fat diet group experienced a significant reduction in the rate of

cancer growth compared to the control diet and the low-fat alone diet.

 

Flaxseed is often touted for its rich amount of omega-3 fatty acids, which

provide a range of health benefits including possible inhibition of cancer

cell growth. For benefits, flaxseed should be ground, as unprocessed seeds

have an indigestible shell.

Inspiration: Lesson of Compassion

 

Sixteen-year old Jocelyn Renfro understands the power of choice when it

comes to preventing the unnecessary suffering of animals. Unfortunately, she

learned the lesson of compassion the hard way.

 

During her freshman year in high school, Jocelyn's love for animals drew her

to join the agriculture program. She raised a piglet, who soon became her

beloved companion. Not realizing what she had gotten herself into until it

was too late, Jocelyn had to come to terms with the fact that her friend

would be sent to slaughter. She says, " It was the last time I would ever see

my pig again and I was lying next to her at the OC Fair crying… I told her

that I was so sorry and that this was the biggest mistake I have ever made

and I made her a promise. I promised her that I would never let that happen

again to any animal under my care. "

 

Now a vegetarian, she has taken in another pig named Abby and a male cow

named Hershey who need never fear the fate of a slaughterhouse. Paying for

all costs out of her own pocket, Jocelyn goes to the farm twice a day to

take care of them. She is currently seeking others who would like to assist

her in her compassionate journey by making a donation so she can continue

providing care for her life-long friends.
