To lighten them up, decrease sweetener and oil by half and substitute applesauce or other pureéd fruit to a total of 1 cup (240mL) liquids. 1 1/2 cups (180g) teff flour 1/2 cup (60g) arrowroot starch 2 tsp (8g) Featherweight® baking powder 1 tsp (2g) cinnamon 1/4 cup (40g) flaxseed meal 1/4 cup (30g) chopped walnuts 1/2 cup (120mL) maple syrup 1/2 cup (120mL) walnut or other unrefined oil 1 tsp (5mL) vanilla extract In a mixing bowl, whisk together dry ingredients. Add walnuts and flaxseed meal. In measuring cup, mix liquids together. Stir liquids in with dry ingredients and mix well. Drop batter by Tbsp onto ungreased cookie sheet. Flatten slightly by criss-crossing with a fork. Bake 12-15 minutes in preheated 350°F (175°C) oven.
