CARROT CORN BREAD

 

1 cup corn meal

1 cup grated raw carrots

1 Tbsp. brown sugar

1 tsp. salt

1/2 tsp. baking powder

2 Tbsp. oil

3/4 cup boiling water

Substitute for two eggs

 

Mix dry ingredients together and add liquid and oil. Blend until smooth.

Pour into an oiled, warm pan and bake in hot oven at 400 degrees for 25

minutes.
