Guest guest Posted October 2, 2005 Report Share Posted October 2, 2005 Capellini Pomodoro Source: 3abn.org 1 16 oz. package angel hair pasta (gluten free if necessary) 3 cloves garlic, minced 1/2 tsp. crushed red pepper 4 Tbsp. olive oil 6 c. fresh tomatoes, diced 1 c. fresh basil, coarsely chopped 2 Tbsp. fresh parsley, chopped salt to taste 1. Cook pasta in boiling salted water. Drain, but do not rinse. Place in a large serving bowl. 2. Heat 3 Tbsp. olive oil and add the minced garlic and crushed red pepper. Sauté for 1-2 minutes. Add the tomatoes, basil and parsley. Cook over medium heat for 3-5 minutes. 3. Pour over pasta and drizzle with the remaining 1 Tbsp. olive oil. Toss together and garnish with fresh basil.
