Homemade Lemon Whipped Cream

1 1/2 cups Silk Soy Milk, vanilla flavored

1 1/2 cups canola oil

2 Tbsp. fresh lemon juice

(vanilla)

 

1. Place the soy milk in a blender and start the machine.

2. Add the oil slowly while the blender is on. Blend for about 30 seconds.

 

3. Place the thickened soymilk/oil mixture in a bowl.

4. Fold in the lemon juice and it will be thick in seconds.

 

5. Add extra vanilla if you like. Chill.
