They are very easily made vegan, that was easy, but they use a lot of flour to make the potatoes/whatever into dough. I tried Bob's Red Mill All Purpose flour but - yuck. They tasted green and bean-y. I made pumpkin ones from a recipe I got from the 'net. I tweaked it but it's the flour that's the problem. I love the idea and I want to play more until I get it right but the flour...... blech. I am such an amatuer with GF flour. All my experiments have been expensive disasters.
