We are dealing with a candida issue right now and don't want to use the yeast. In the past I stumbled on a great, simple alternative for cheese sauce completely in ignorance. We use this for haystacks,volcanos, rice noodle toppings and anywhere else we need a cheese sauce Cheater Cheese Sauce Cooked Potatoes Cooked Carrots boulion or stock of choice pepper, salt seasonings of choice Cook potatoes and carrots in your choice of liquid (the stock or boulion + water). Add all ingredients to your blender and blend. Add liquid or solids to adjust to the desired consistency. Mashing potatoes in the blender makes the starches in them gluey, yucky for mashed potatoes, but perfect for cheese sauce. Add carrots for color and seasonings for taste and voila, instant cheese sauce for the diet challanged. (This was a company dinner rescue mistake revelation).
