Guest guest
Buckwheat Burgers 1 cup of whole, raw buckwheat 3 scallions, chopped 1/4 cup shelled sunflower seed 1/2 cup garbanzo/fava flour (or soy flour) 1/4 cup silken tofu, mashed or 1 egg substitute of choice finely chopped parsley or dill (optional: finely chopped carrot, celery or zucchini) 2 Tbls wheat free tamari Cook the buckwheat in two cups of lightly salted water until it is very soft. Let it cool until you can handle it easily. Saute scallions, sunflower seeds and other vegetables for a few minutes Combine all of the ingredients, form into patties and pan fry on both sides or bake in a medium oven. The patties stay together better if the mixture sits for at least an hour before they are formed. Serve with ketchup or salsa.
