Guest guest Posted July 3, 2006 Report Share Posted July 3, 2006 Onion Puffed Mashed Potatoes 2 kg (4 lb) potatoes, peeld and cubed 90 g (3 oz) vegan margarine around 1/2 cup milk sub 2 tablespoons (8 tsp) grated onion salt and freshly ground blanck pepper 1 small onion, finely sliced a little extra vegan margarine, softened 1. Cook potatoes in boiling salted water until tender. Drain and mash with margarine and milk sub until light and fluffy. Stir in grated onion and season to taste. 2. Spoon into a shallow flameproof casserole. Press sliced onions into the top of the potatoes and brush with softened margarine. 3.
