JAMAICAN RICE

 

1 cup black-eyed peas

1 cup canned coconut milk

1 medium diced onion

1 tsp. salt

1 tsp. thyme

1 tsp. garlic powder

2 tsp. Vege-Sal

6 cups water

2 cups long grain brown rice

 

Place peas in a kettle and add all remaining ingredients except rice.

Simmer for 1 hour. Add rice and simmer for 30 minutes. Stir lightly with a

fork and continue cooking until rice is tender, about 15 minutes more. More

water should be added if it is all absorbed before the rice is finished

cooking. Serve. Cooking time: 1 hour and 45 minutes.
