Guest guest Posted January 20, 2004 Report Share Posted January 20, 2004 JAMAICAN RICE 1 cup black-eyed peas 1 cup canned coconut milk 1 medium diced onion 1 tsp. salt 1 tsp. thyme 1 tsp. garlic powder 2 tsp. Vege-Sal 6 cups water 2 cups long grain brown rice Place peas in a kettle and add all remaining ingredients except rice. Simmer for 1 hour. Add rice and simmer for 30 minutes. Stir lightly with a fork and continue cooking until rice is tender, about 15 minutes more. More water should be added if it is all absorbed before the rice is finished cooking. Serve.
