Guest guest Posted July 29, 2004 Report Share Posted July 29, 2004 Heavenly Rice Pudding Very Yummy and Light, like a dessert. • 3 cups cooked brown rice • 1 1/2 cups vanilla soy milk (or other) • 1 1/3 Tbsp vanilla • 2/3 cup raisins or currents • 1/2 cup sliced almonds • 1 cup whipped topping, see below Cook all except whipped topping in a medium saucepan over medium low heat until warm and creamy. Let cool and fold in whipped topping. Variation: Omit soy milk and cooking procedure. Just combine all ingredients and serve. Tips n Techniques Remember to check soy milk ingredients if serving to someone with gluten or wheat intolerance. Or use Nut milk see pg 26. Rich Tofu Whipped Cream Easy and quite tasty! • 12 oz Mori Nu silken tofu, firm or extra firm • 2-3 Tbsp French Vanilla Soy Creamer (or other milk) • 3-4 Tbsp raw sugar (or 2-3 Tbsp honey or pinch of Stevia) • 2 Tbsp vanilla • 3-5 Tbsp olive oil Process all but olive oil in the food processor on high until very smooth, while still on high, slowly add oil. Chill and serve. This is a bit soft. The faster your food processor, the “fluffier” and thicker this will get. Try your blender too (requires much stopping, starting, and stirring).
