Guest guest Posted April 22, 2005 Report Share Posted April 22, 2005 Pumpkin Pie 1/2 cup packed dates 1 cup boiling water 3/4 cup maple syrup 1 1/2 cups pumpkin puree 1/2 cup raw cashews, washed, liquefied in 3/4 cup water 1 tsp. salt 2 Tbsp. vanilla 1/2 tsp. coriander 1/4 cup cornstarch Blend dates and boiling water. Then add remaining ingredients and blend again. Pour mixture into unbaked (gf) pie crust. Bake at 350 degrees F. for 1 hour or until pie is set (check center for doneness).
