Orange-scented Sweet Potatoes

 

6 sweet potatoes, baked

5 T. orange juice

1/2 t. grated orange rind

1/2 t. grated lemon rind

1 t. grated fresh ginger root

pinch of ground nutmeg

2 1/2 T. maple syrup

1/8 t. salt or to taste

pecans, chopped and lightly toasted

 

Preheat oven to 350 degrees F. Peel sweet potatoes and place flesh

in a food processor along with remaining ingredients. Process until

smooth. Bake puree in a casserole dish until heated through, about

15 minutes. Garnish with pecans and serve hot.

 

Serves: 6

Calories per serving: 126
