Amy Sweet Potatoes with Caramel Sauce -------- Potatoes: 4 cups mashed, sweet potatoes 3/4 brown sugar 1/2 cup cream (half and half)(I used silk creamer) 1 tsp vanilla 1 cup pecans Sauce: 1 cup sugar 1 stick butter (margirine of choice) 1/2 cup half and half ( I used silk creamer) 1 tsp. vanilla 1 pinch salt Blend with mixer the potatoes, brown sugar, cream and vanilla. Place potatoes in greased casserole, making well in center (not too deep). Sprinkle with pecans. BAke at 350 til hot. Just before serving, pour sauce over all and in well. Caramel Sauce: Melt butter and sugar in heavy skillet til golden brown, stirring slowly. Pour in cream and cook til clear. Add vanilla and salt. Pour over sweet potatoes.
