Rock Cakes.

 

Dry Ingredients

 

1/3 cup sugar

1 1/3 cups brown rice flour

1/3 cup potato flour

1 tablespoon (4 tsp) baking powder

1 teaspoon xanthan gum

2 teaspoons egg replacer powder

1/2 teaspoon cinnamon

1/2 teaspoon mixed spice

 

Wet Ingredients

 

1/2 cup soy milk or rice milk

1 120g (4 1/2 oz) can apple baby food

80g (1/3 cup) vegan margarine

3/4 cup mixed dried fruit – 1/2 sultanas & 1/2 organic dried apricots

(or all sultanas or all apricots)

 

Method

 

1. Set oven to 200°C (390°F).

2. Grease and/or line baking tray.

3. Sift dry all ingredients except sugar into large bowl.

4. Rub in margarine with fingertips.

5. Add sugar and fruit and mix well.

6. Add the baby food and soy or rice milk.

7. Place spoonfuls of mixture onto tray, leaving room for spreading.

8. Bake 15 minutes.

9. Cool on cake cooler.
