Guest guest Posted December 8, 2004 Report Share Posted December 8, 2004 Buckeyes 1 jar (16 oz.) creamy peanut butter (or other nut butter) 1 cup dairy-free margarine, softened 1-1/2 pkg. (16 oz.) powdered sugar* 2 cups (12 oz.) semisweet chocolate pieces (dairy-free) 2 TB vegetable shortening Beat peanut butter and margarine at medium speed with an electric mixer until blended. Gradually add powdered sugar, beating until blended. Shape into 1-inch balls; chill 10 minutes or until firm. Microwave chocolate and shortening in a 2-quart glass bowl at HIGH 1-1/2 minutes or until melted, stirring twice. Dip each ball in chocolate mixture until partially coated; place on wax paper to harden. Store in an airtight container. Yield: Makes 7 dozen. *Vegan powdered sugar can be made at home using Florida Crystals, cornstarch, and your blender. " I send you love and good dishes --- from my house to yours!
