Pignoli Dip

(Makes 1-2/3 cups)

 

This unusual use of green peas makes for a dip that will remind you of

spring. Pignoli are also called pine nuts. You can find them in the gourmet

section of most markets.

 

2 Tablespoons pignoli, toasted

One 10.25-ounce package reduced-fat tofu

3/4 cup cooked green peas

1 Tablespoon lemon juice

1/8 teaspoon garlic powder

Salt and pepper to taste

 

In a blender or food processor, combine all ingredients until smooth.

Refrigerate at least 1 hour prior to serving to allow flavors to blend.

 

Total Calories Per 2 Tablespoons: 34

Fat: 1 gram
