I'm still transitioning to vegan and gluten-free, having eliminated dairy and most gluten from my diet for health reasons. I joined this group to learn recipes and build my cooking self-confidence. A year ago, I developed some kind of food intolerance and have not been able to get away with eating gluten since then. My doctor says I'm also allergic to dairy and eggs. I used to eat a lot of chicken but can't tolerate even the hormone-free kind any more. I don't eat much meat but my blood tests show I'm low in protein so I'm concerned about stopping meat completely until I feel confident about replacing it with healthy alternatives. I've always been a " convenience foods " kind of cook, but my body has put its foot down about that. So it's " scratch " cooking from now on. So far, I can make a mean lentil soup [found by searching online] and recently made a decent batch of split pea soup [a friend's recipe]. They're simple and good to have in the fridge or freezer but I need more variety. Can anyone suggest more recipes in the " convenience foods " category, that I can make ahead and freeze?
