Hi everyone! I'm new to the group.

 

I'm a 55 year old wife and mother of 2.

 

A

couple years ago, I was told I was a text-book example of metabolic

syndrome.  You probably know what I'm talking about--borderline high

bp, high triglycerides, low HDL, showing signs of insulin resistance,

and I weigh too much.  I don't want to be on medicine so I've been

trying to follow the Eat-to-Live program to get back on the path to

good health--including a healthy weight. It's been very hard to be

vegan (or nearly so) with no support at home and to add to the

difficulty, with my job being so hectic and traveling a fair bit, I eat

out a lot more than I should.

 

I hope to pick up some

encouragement and some tips on how to cook and pack good low fat vegan

meals that don't take too much time and energy. I hope that I can offer

some good words from what I've learned to date as well.

 

One of my favorite blogs is Fat Free Vegan Kitchen.  I'll bet you're all

familiar with SusanV's blog and recipes.

 

Anyway, I'm delighted to be part of this group.

Welcome Louise --

 

I¹m the only vegan in my house ‹ I went vegan nearly 3 years ago, and it

was a sudden change ‹ I wasn¹t even vegetarian before that! Just read The

China Study and went cold turkey, so to speak. It seemed hard at first ‹

but it will soon be easy as you get used to it and learn new recipes. I love

eating this way now ‹ I no longer want any of the old foods I used to eat.

People at my work tend to order lunch in all the time, and it used to be

hard to eat my healthy meals, but now I look at the things they¹re eating

and think YUCK! No way am I putting that in my body.

 

For eating out, I find the easiest choices are Subway (the veggie patty in

Australia is vegan ­ can¹t speak for other countries) or Asian places.

Mexican places are good too, so long as they don¹t use lard in their beans.

Bean burritos loaded full of lettuce, tomatoes, salsa, etc. Even guacamole,

but ask ‹ some places here put sour cream in theirs.

 

My biggest tip would be to scour the recipe books as there are some very

good ones out there ‹ and even online, my favorite site being

http://blog.fatfreevegan.com
