Guest guest Posted April 21, 2010 Report Share Posted April 21, 2010 Hey it has been a long time since I shared anything but I tried these the other night(modified a meat recipe) and it turned out great. The left over stuffing is also great on top of eggplant. Ingredients: 2lbs whole crimini(baby bell) mushrooms drop of olive oil(about a dime) Mushroom stems chopped finely(I also put in the broken caps) 1 small onion chopped finely ½ cup parmesan cheese ½ cup shredded cheddar/jack cheese 1 cup bread crumbs ½ teaspoon Vegan Worcestershire sauce(can be purchased online) ½ teaspoon salt ¼ teaspoon pepper ¼ teaspoon oregano ¼ teaspoon sage Preheat oven to 350 degrees Saute mushroom stems and onion, In olive oil,cook until softened. Then add remaining ingredients, except mushroom caps. Stir until well combined. Stuff mushrooms with approximately 1 teaspoon of stuffing and place stuffingside up on cookie sheet. Bake for about 15 minutes, or until mushrooms are softened. side note: I use a food processor to chop up the stems and onion and have also used it to combine all of the ingreidients and it turns out really smooth.
