Guest guest Posted December 5, 2004 Report Share Posted December 5, 2004 Pineapple Pie 2 cups pineapple juice 1 package (10.5 oz) firm Mori-Nu tofu 1 cup unsweetened coconut, shredded 1/3 cup cornstarch 2 Tbsp. liquid sweetener of choice 1/4 tsp. salt 1 tsp. vanilla 1 can (20 oz.) pineapple, crushed Blend all ingredients except the crushed pineapple together in a blender. Remove to a saucepan, and add the crushed pineapple with the juice. Cook this mixture over medium high heat, stirring constantly until thickened. Pour into pre-baked pie shell of choice.
