Guest guest Posted June 1, 2005 Report Share Posted June 1, 2005 Apple Prune Cookies Source: Healthy Food Choices (adapted) 1 cup chopped dates 1/2 cup each chopped prunes and frozen orange juice concentrate 1 1/4 cups shredded, unpeeled apple 1/2 cup each chopped nuts and unsweetened coconut 1/2 tsp. salt 1 tsp. fanilla 3 cups rolled quinoa flakes Heat dates, prunes, and orange juice concentrate in microwave or in a pot until dates can be mashed. (Mash with a fork or in food processor). Add remaining ingredients and mix well. Drop by tablespoonful on lecithin treated pan. Bake at 350 degrees F. for 15 - 20 minutes.
