Thanks, Erin. The tofu salad is a good idea! Was afraid to try Fakin'

Bacon for fear of it being too liquid smoke tasting.

I make a mock tuna salad out of garbanzo (chick pea) beans, I usually don't

call it mock tuna salad I call it a bean spread.

 

I can garbanzo beans drained.

1 celery chopped

green onion chopped

1 carrot chopped

1 TBS pickle relish

1 TBS mayo

1 TBS mustard

salt and pepper to taste.

 

mash beans add celery, green onion, carrot, pickle relish mayo mustard salt

and pepper. Stir to combine chill at least an hour.

You can make them into a sandwich or serve as a dip.

 

You can always to the old stand by of PB & J sandwiches.

 

Also there is humus which makes a great sandwich.
