Burke's book is fantastic and covers much more culinary ground than

Joanne's excellent Uncheese book.. hers is specific to " cheese-like " subs.

Burke provides many kinds of dishes and also does a lot more with seitan

then most. He's got an amazing range. His " pizza cheese " sauce works

well, although it's not as " rubbery " or " hard " as " real " cheese. Rarely

happens.

 

Check out Bryanna Grogan's " Almost (no fat) Vegetarian cookbook. " She's

got a macaroni'n'cheese recipe that blends together a potato, carrot, and

onion cooked in water with nutritional yeast and soft tofu to make a

fanastic sauce.

 

Cottage cheese is easy... the trick is to use a potato masher on firm tofu

..... little dill or spices to taste. It gets you the right texture.

 

Finally, I managed/organized the recipe collection in " Mad Cowboy " Howard

Lyman's new book, " No More Bull, " (110+ vegan recipes from various friends

of Howard Lyman's, chefs, and cookbook authors). I pulled a very versatile

recipe from Bryanna Grogan's " 20 Minutes to Dinner " in it... " Melty Pizza

Cheese " (with 8 or so variations). The " viscosity " comes from the use of

corn starch. As she notes, it makes great quesadillas. If I get

permission to post it online, I'll let the List know. Might be available

in Bryann's superb " New Veggie " forum over at Vegsource.com
