Her son is autistic, and has been going through a lot of testing and regimens to assist with that. We knew before that he was unable to eat wheat, dairy, or casein, but now they have also added no soy to that list and she is at a loss as to what to feed him. If anyone here can offer any assistance it would be greatly appreciated. She is especially looking for kid friendly recipes. My heart goes out to your friend. I'm sharing some general info that might help her convert recipes. Also, we love almond and rice milk at our house. We use it to drink, cook and bake with. This is from a book called " Special Foods for Special Kids by Adelman/Behrend. Substitutions for flours: 1 cup all-purpose flour equals: 7/8 cup rice flour(brown or white) 3/4 cup soy flour 5/8 cup potato starch flour 3/4 cup potato starch 1 cup corn flour 1 cup corn meal 1 cup tapioca flour 3/4 cup chick pea flour 7/8 cup garbanzo bean flour To help baked goods hold together that don't contain wheat, add 1 teaspoon xanthan gum (can be found in most health food stores) for each cup of flour in your recipe. Also, if you don't have a good health food store near you this is a good website to find wheat-, dairy-, soy-free foods www.ShopByDiet.com Take care!
