It is called Tofu Loaf but I have made it over and over even my late husband liked it with ketchup! He was a meat eater but preferred some of my stuff like the Boca Burgers loved those! LOL Tofu Loaf 2 cups mashed Tofu--I use firm or extra firm 1 cup chopped Onion 1 cup rolled oats-not instant ,quick cooking works well 1/2 cup chopped walnuts 3 TBL peanut butter 4 TBL Tamari-not shoyu or soy sauce 1-2 cloves garlic, minced or pressed 1/2 tsp sage(I have used thyme too) Mix all well using your hands or I use a processor and pulse. Press into a well oiled loaf pan 9x4 works great something along that size. Bake at 350 for 55-60 minutes. Let it sit a bit then slice and serve with a sauce, ketchup, etc. This is a standby for me. The book is " Cooking with the Right Side of the Brain " by Vicki Rae Chelf. There are other things in here too I have tried and like I think you can get it at any bookstore.
