I was reading about your altitude and yes that does play a bit as I am at 3000 feet and can have a bit of trouble at times. I also have extremely and I mean extremely hard water so if I use bottled water they cook easier. My husband used to laugh and call it a bean-a-thon when I tried to make chili sometimes it took literally days for them to cook! I now soak them for at least 24 hours then cook them for a very very long time or just put them in a casserole dish in the oven that seems to work best. Still takes 6 hours for pintos. Lentils take longer here than when I lived in the valley. You will love that cookbook I just ordered a couple more from ECookbooks.com great place for cookbooks and great prices too. I got the meat and potatoes vegetarian by Robin Robertson and Cafe Flora the vegetarian restaurant from Seattle their cookbook. I can hardly wait. Let us know how you like those lentils.
