Roasted Pumpkin Wedges with Maple-Chipotle Glaze 1 (2-lb) pie pumpkin 1 tbsp vegan margarine 1/4 cup finely chopped onion 1/3 cup minced chipotle peppers in adobo sauce 3 tbsp maple syrup 1/4 tsp salt 1/8 tsp curry powder 1. Preheat oven to 400 degrees F. Bring a large pot of water to a boil. Cut pumpkin into 4 wedges; seed. Drop into boiling water and partially cover. Boil for 10 to 15 minutes or until fork tender. Drain well. 2. Meanwhile, make glaze. Melt margarine in medium saucepan. Add onion and saute 2 minutes or until tender. Stir in chipotle sauce, maple syrup, salt, and curry powder and heat 1 minute until blended. 3. Arrange pumpkin wedges, cut side up in shallow baking dish. Spoon glaze into cavities. Thanks, Shelly! I did catch the other recipe, whatever you titled it... you seem to be doing fine, btw! And looking at this - I bet it would be just as tasty with acorn squash!
