Here is the recipe you were interested in. I already posted the

that! I re-read the group rules and am trying to comply but it's all

new to me. I will try to do better in future. :)I have been dying to

try this recipe but I can't find pumpkins anywhere now that

Halloween is over! I may resort to an acorn squash or the like.

 

Roasted Pumpkin Wedges with Maple-Chipotle Glaze

 

1 (2-lb) pie pumpkin

1 tbsp vegan margarine

1/4 cup finely chopped onion

1/3 cup minced chipotle peppers in adobo sauce

3 tbsp maple syrup

1/4 tsp salt

1/8 tsp curry powder

 

1. Preheat oven to 400 degrees F. Bring a large pot of water to a

boil. Cut pumpkin into 4 wedges; seed. Drop into boiling water and

partially cover. Boil for 10 to 15 minutes or until fork tender.

Drain well.

 

2. Meanwhile, make glaze. Melt margarine in medium saucepan. Add

onion and saute 2 minutes or until tender. Stir in chipotle sauce,

maple syrup, salt, and curry powder and heat 1 minute until blended.

 

3. Arrange pumpkin wedges, cut side up in shallow baking dish. Spoon

glaze into cavities. Roast for 15 minutes, basting once with sauce.

 

Serves 4.

Oh Shelly this sounds awesome and would be wonderful on Acorn Squash!!!!!

I am gonna try it this weekend. I also have chipotle powder so this will be

perfect.

Thanks, Shelly! I did catch the other recipe, whatever you titled

it... you seem to be doing fine, btw! And looking at this - I bet it

would be just as tasty with acorn squash!
