PT - can't find recipe

I found Sweet Onion Corn Bake but can't find the Mexican Manicotti.

Can you tell me what section it is in?

 

There are some amazing recipes here! AVOCADO FRIES?? How many have

tried those? :)

Hope this is the correct recipe. :)

 

Files > Main Dishes > Pasta Dishes

Mexican Manicotti

 

1 lb. of Yves brand veggie ground ~ or your favorite brand

1 can (16 oz) refried beans

1/2 cup finely chopped onion

2 1/2 tsp chili powder

1 1/2 tsp dried oregano

1 package (8 oz) manicotti shells

2 1/2 cups water

1 jar (16 oz) picante sauce

2 cups (16 oz) light sour cream (or vegan alternative)

1 cup shredded Mexican style cheese (optional)

1/4 cup sliced green onions

Sliced ripe olives, optional garnish

 

In a bowl, combine veggie ground, refried beans, 1/2 cup chopped

onion, chili powder and oregano. Spoon into uncooked manicotti shells;

arrange in a greased 13x9x2 inch baking dish. Combine water and

picante sauce; pour over shells. Cover and refrigerate over night.

Remove from refrigerator 30 minutes before baking. Cover with foil and

bake at 350 degrees for about 1 hour. Uncover; spoon sour cream over

the top. Sprinkle with cheese, green onions and olives if desired.

Bake 5 to 10 minutes longer.

Yield: 8 servings

Avocado Fries With Chipotle Ketchup

 

today, i tried part of this recipe (posted by some dude named richard

on the cocina-mexicana () list). i thought it was so

off-the-wall, i

just had to try it. and, it was different. honestly, the avocado

fries were not bad. i didn't make the chipotle ketchup, but tried the

avocado fries with

several different condiments (ranch dressing, salsa, and regular

ketchup). i liked ketchup the best, but salsa was ok too. i think

the chipotle ketchup would be a better choice. so, if you have an

abundance of avocados and want to try something different, this is the

recipe for you. :)

 

Avocado Fries With Chipotle Ketchup

 

oil for frying

2 avocados (just beginning to ripen)

1 c. flour

1 tsp. each, cumin, coriander, salt & white pepper

2 eggs

1/2 c. milk

1 c. panko (Japanese bread crumbs)

2 tbsps. extra virgin olive oil

1 medium onion, diced

3 cloves garlic, diced

1 chiptole pepper, in adobo sauce, chopped

4 roma tomatoes, chopped

1/2 tsp. Chinese Five Spice powder

1/4 c. cider vinegar

1/2 c. light brown sugar

 

For ketchup, heat olive oil in saucepan and saute onion and garlic for

6 minutes. Add chipotle pepper and tomatoes, cooking over low for 5

minutes.

Add spices, vinegar and brown sugar, simmer for 8 minutes. Puree in

food processor, add salt to taste.

 

Heat oil to 350 degrees in deep fryer. Cut avocado in half, remove

seed, quarter each half, gently peel skin away. Combine flour, cumin,

coriander, salt and pepper in flat bowl. Put Panko in another flat

bowl. Lightly beat eggs and milk, and put in yet another flat bowl.

Dredge avocado slices in flour, then egg mixture, coat with Panko.

Deep fry until golden brown.

Remove from oil and place on paper towels to drain.

 

Serve with Chipotle Ketchup.

 

Makes 4 servings

I second your comment that it does not taste very good straight from the

can --

we purchased a case of the stuff and for what it costs -- it was a very good

value nor does it taste very good -- have been trying to doctor it up but it

still seems to fall short --

 

what I wish I could find again were mock shrimp -- those little suckers

made

for the best scampi or any kind of stir fry

I saved it to my computer but it's not there or in the files here or

Donna's group. Do you think you could type it for me again when you

I don't think I have a recipe like that in my files.

i thought i did once, too. i searched the messages here

using the key words " mock shrimp " but came up with

no hits, so maybe i didn't. Hmmm.

But i can certainly do it again, and will later on after

everyone is at school. :)

It was either mock shrimp or un-shrimp. I spent a good amount of

time yesterday searching both groups and just couldn't find it.
