I don't know which recipe/s have already been posted on the topic but this one looks great and it does have pnb in the sauce. Is this anything like the one that you were looking for? Cheers from Marie in Holland http://www.vegparadise.com/cookingwith57.html MARINATED TOFU FINGERS WITH SPICY PEANUT SAUCE Marinade 1/4 C. (60 ml) + 3 T. rice vinegar 1/3 C. (80 ml) Sucanat (unrefined cane sugar) or turbinado sugar 1/4 t. salt 1/4 t. crushed red pepper flakes 1 lb. (450 g) extra firm tofu, cut into 10 thick fingers 10 wooden skewers 1.. Combine rice vinegar, Sucanat, salt, and crushed red pepper flakes in a small saucepan. Gently heat on medium until sugar is dissolved. Pour into an 8-inch (20 cm) square baking dish and add tofu fingers. 2.. Marinate for several hours or overnight, turning several times. 3.. Insert skewers deeply into tofu fingers, and grill for about 5 to 8 minutes, turning frequently to avoid burning. Serve with Spicy Peanut Sauce for dipping. SPICY PEANUT SAUCE 1/3 C. (80 ml) crunchy peanut butter 1/4 t. salt 3 T. lemon juice 3 T. maple syrup 1 T. water 3 or 4 dashes Tabasco Sauce Combine all ingredients in a bowl and stir with a wire whisk until smooth and creamy. Can be made a day ahead.
