Guest guest Posted November 13, 2005 Report Share Posted November 13, 2005 As I've mentioned, DH is a " captive vegetarin, " since I won't have dead animals in the house. But I like to accommotate his love of poultry with various fakeout vegetarian dishes. Here's one we both love that would work well for Thanksgiving. They also work for grinders, subs, etc. Just slice on the diagonal. Sherry in Oregon Fakeout Thanksgiving Cutlets for Two Boil 2 cup water. Stir in: 1 to 2 teaspoons vegetable base or 2 vegetarian bouillon cubes or double strength broth 1/8 teaspoon poultry seasoning Pinch onion powder 1/8 teaspoon celery seed (if you have it) 1 Tablespoon oil Add 2 TVP cutlets or two Naked Quorn or other " meat " soy substitute for two people. Allow to marinate, refrigerated if using Quorn, for several hours or overnight. Drain. Set on your counter three bowls. In the first, put in a couple tablespoons flour. In the second, break an egg and stir thoroughly with a fork (well beaten Egg Replacer might work as well, but I haven't tried that). In the third, put in 1/4 cup or so Italian bread crumbs (or plain bread crumbs or panko or cornflake crumbs mixed with Italian seasoning). Meanwhile, heat a little oil in a small fry or saute pan over moderate heat. Dip each drained cutlet in the flour, then the egg, then the bread crumbs. Be sure all sides of each cutlet are coated with everything. Saute around 3 minutes on each side, until golden. NOTES: If you own a GT Express, this recipe works perfectly in it. You can change the seasonings to get a different flavor of cutlets. For example, omit the poultry seasoning, then add grated parmesan to the breadcrumbs. Or: substitute taco seasoning (maybe a teaspoon) for the poultry seasoning in the marinade. Mix chipotle with the flour. Mix a little hot sauce with the egg. Use more taco seasoning and chipotle powder and grated cheese with the bread crumbs. Etc. Besides all manner of TVP, they sell vegan jello, cookbooks, and many, many other vegetarian and vegan items, including marshmallows! I'm a big, big fan of TVP, since it pleases DH and is so very cheap and versatile. I keep lots in the freezer (not necessary, but that's the only space I have). I also have a water purifier and a creek running through the back yard, so I feel a bit secure in case we lose power and the ability to get into town for awhile. Thank you also for the review of that hippy farm store in TN. i have one of their mail order catalogs and have been meaning to place an order with them since no stores around here carry any TVP other than Bob's Red Mill. BRM brand is good, but they only come in crumble size and i would love to try bigger chunks.
