It looks like regular flour but is composed of just the pure gluten... so most of the work is already done for you in the process because before you'd have to mix it up and then rinse, rinse, rinse the stuff away to be left with just the gluten of the flour. No as far as yeast flakes go, you cannot use regular active yeast packets to replace that part. Yeast flakes refer to the nutritional yeast flakes that you can sprinkle on food to give it an almost cheesy flavor. They are rich in vitamins and very yummy. i find them in the bulk bins of healthfood stores, but others have posted pictures of cans you can buy... i've never looked for them before though.
