Making Seitan? - Linda

In order to make the quick, bread machine version you need to use

wheat gluten (also called vital wheat gluten or gluten flour) I was

a bit confused about this when I first made it. I have always had

vital wheat gluten around the house because I make my own 100% whole

wheat bread (the gluten helps with the rising) but I didn't know it

was also referred to as gluten flour. The rinse, rinse, rinse method

is done with whole wheat flour.

I understand now I do ave the gluten flour here too. I make my own bread

too.

I did the rinse rinse rinse one from George Burkes book what a lot of work

and my hands would not be able to do that again! It had a nice texture

though. I will get some more gluten flour when I go to the store and make

some up. I think this and tempeh are my two favorite 'meats'. I love tempeh

too!
