Potato Salad Recipe

This is a super recipe I just made on Sunday very different but very nice

From the Professional Vegetarian Cooking Book by Ken Bergeron

 

Golden Potato Salad with Olives and Apricots

 

3 large Yukon Gold potatoes cubed and cooked (don't overcook these)

2/3 cup green olives, chopped ( I used 3 kinds, green, kalamata and black)

6 TBL dried apricots minced( about 6 apricots I soaked mine first)

2 TBL red onion minced

2 TBL white wine vinegar

2 TBL lime juice (I used lemon)

2 tsp prepared brown spicy mustard(I used sweet hot)

1/2 tsp salt

pinch black pepper

4 tsp. olive oil

2 tsp fresh basil minced (I used 1 dried)

2 tsp fresh parsley minced (I used 1 dried)

 

Put everything together and toss gently. You can add a bit more olive oil

if you wish. I loved this and will most definitely make it again

What an interesting combination. i never

would have thought to add dried apricots

to a potato salad recipe. Thanks for sharing

this recipe. :)

 

About how many 1/2 cup servings would you

say this made?
