Guest guest Posted November 15, 2005 Report Share Posted November 15, 2005 Quick Mix -- a vegan way 12 cups whole wheat flour - sometimes I substitute a cup of oat bran or pecan or almond meal for one of the cups of whole wheat 1/4 cup baking soda 1/4 cup baking powder 1 Tbs salt @ 1 1/2 cups -- I use powdered soy milk beverage, vanilla flavored; very tasty [you can also leave out the powdered milk or soy milk and add regular liquid milk or soy milk when you cook with the powder. If you use liquid buttermilk, add a little extra baking soda] [2 1/4 cups vegetable shortening] optional, I never use hydrogenated fats When I make pancakes I mix the powder with water, then sometimes add a dollup of liquid vegetable oil, usually canola. It can be made fat-free. I also add things like pecans, cinammon, ginger, molasses, berries, or other flavors of the day. I spray the griddle with a mist of canola oil. A big griddle is important for good pancakes. The mix works well in a waffle iron, but it really needs the oil in the batter and extra spray oil on the iron to keep it from sticking. For bisuits I use less water and more canola oil. When my grandmother was sick, I made her some using half & half and butter, rather than oil. Very rich and fattening; she needed the calories. The second listing where it calls for 1 tsp. is for baking soda. That typo would have made a HUGE difference.
