Guest guest
Thanks again to all of you who gave your opinions and suggestions on storing my spaghetti squash. I cut it in half, scraped out the seeds, nuked it until it was soft, let it cool, then scraped it with a fork and put it in a container and in the fridge. When I pulled it out tonight to use for dinner, it was in perfect shape -- not mushy or anything. I boiled up an equal amount of angel hair pasta for 3 minutes, then added the spaghetti squash for three more minutes to heat it through. Then I drained it and stirred in some sauce and cheese. I really like it this way. The squash adds some crunch but it didn't feel like I was eating all vegetables. Sherry
