Shiitake Tofu soup (vegan recipe)

I made this tonight and I thought it was really hearty and good (and

easy!) Hubby liked it alot, too, but the kids hated it :(

 

Shelly

 

Shiitake Tofu soup

 

1/2 tsp basil

1/4 tsp pepper

1/4 tsp garlic powder

1/4 tsp oregano

1/4 tsp rosemary

1/3 cup dried minced onion

3 medium carrots, diced

1/2 cup chopped sun dried tomatoes

1 cup dried shiitake mushrooms, broken in pieces (do not rehydrate)

1/2 cup pearl barley

1 cup diced firm tofu

4 cups veg broth

4 cups chicken flavored broth (vegan)

1 cup lentils, cooked separately

 

Put all ingredients in large soup pot except lentils. Bring to a

boil. Reduce heat, cover and simmer for 40 minutes or until

mushrooms are tender. Add cooked lentils. Makes 6 main dish

servings.

Wonder what they didn't like?

Sounds good to me, except i would have to

substitute out the shiitake shrooms for some

other kind. Something about them i just don't

like, which i have found odd since i generally love

all other mushrooms. But there are so many different

kinds out there to try, so finding one to use in place

of it shouldn't be a problem.

My two oldest kids ate the broth but none of the veggies. My

youngest three tasted once and said they didn't like it (I think it

was because of all the stuff in the soup) Hubby said I should have

made it a puree soup and they probably would have eaten it. He may

be right but my thinking is that I want them to learn to like it and

how will they know if they can't even tell what they are eating.

I think dehydrated shiitakes are strangely textured when rehydrated.

But, I had a big Costco size container to use up. I think the soup

would be great with regular white mushrooms!

Aw, that's too bad they didn't like it. It may take

some time to get them involved in enjoying all

the different tastes and textures. i know as a child

i hated onions, peppers, and most of all spinach.

Now i can't seem to get enough of them! *lol*

 

i think you are right about the textural thing with

shiitake mushrooms. i guess it is mostly the

rubberyishness [new word *lol*] of them that does not

appeal.
