Guest guest
i hear that! i was thinking next time i make stuffed shells i would smash up some tofu to thin out the riccota cheese i usually use. From what people tell me on these veg lists you really can't taste a difference. i bet mixing some smashed tofu, garlic, and spices in with some spaghetti squash would make interesting stuffed shells.... or even some acorn squash. Guest guest
I have stuffed manicotti with pureed sweet potatoes and nonfat ricotta before and it turned out wonderfully. This, of course, also makes a delicious cheese filling for lasagne. -Erin , " Amy " <sandpiperhiker> wrote: > > > i hear that! i was thinking next time i make stuffed > > shells i would smash up some tofu to thin out the > > riccota cheese i usually use.
