cutting fat; was: Quick Spaghetti Squash

i hear that! i was thinking next time i make stuffed

shells i would smash up some tofu to thin out the

riccota cheese i usually use. From what people

tell me on these veg lists you really can't taste a

difference.

 

i bet mixing some smashed tofu, garlic, and spices

in with some spaghetti squash would make interesting

stuffed shells.... or even some acorn squash.

Possibilities are endless. :)

I use firm water-pack tofu mixed with somelowfat cottage cheese (if I

have it), or just the tofu, drained & mashed with oregano, salt and

little dab of olive oil, for the cheese in my lasagna.

I have stuffed manicotti with pureed sweet potatoes and nonfat

ricotta before and it turned out wonderfully. This, of course,

also makes a delicious cheese filling for lasagne.

I've done that with raviolis... never thought to do it with lasagne

though! YUm!

I have stuffed them with chopped spinach and smashed extra firm tofu, no one

ever knows the difference!!

Spices? Do you precook the spinach? Is there a sauce on the top? Vegan for me of

course. I guess the question is what is the recipe? Or where to find? I just got

onto this list and so haven't seen recipes from here. The Quick Spaghetti

Squash...recipe?
