Homemade Honey (recipe)

i just ran across this recipe and although i haven't

tried it, i thought that someone on the list may be

interested in it, esp. since it's a vegan replacement

for honey.

 

Homemade Honey

 

3 cups water

10 cups sugar

1 tsp alum

3 cups clover blossoms (no green parts)

2 & 1/2 cups other flower blossoms (no green parts)

 

Boil water, sugar and alum for 10 minutes. Remove from

heat.

Rinse blossoms in a strainer, and drain well.

Stir in blossoms.

Steep for 3 hours.

Remove flowers. Strain through cheesecloth, if

necessary.

Reheat to a boil, then pour into jars, and seal.

Where on earth would I get all of these blossoms without being arrested for

stealing from the neighbors garden? <grinning> And it is winter too! Never see

them in the stores and would worry about them having been sprayed. And I am too

lazy anyway! LOL But if one wants a short cut try using Agave nectar or brown

rice syrup in place of honey if you want vegan.

Actually you could get away with dried red clover and chamomile flowers in

the winter time. Here in Minnesota it is threatening snow and in the teens

so no flowers till May....
